Shrimp Lettuce Wraps by SALT at Station 22

Ingredients

1 pound peeled and deveined shrimp tail off

1 head Bibb lettuce

1 small green pepper

1 small yellow pepper

1 small green pepper

? small red onion

1 medium vine ripe tomato

1 lime

? T. jerk paste

? Cup Honey

? cup olive oil

hot sauce to taste

salt and pepper to taste

Old Bay Broth

? gallon water

? cup Old Bay

1 lemon cut in half and juiced

Procedure

In medium pot combine the shrimp and Old Bay Broth. Place over medium high heat. Stir the shrimp to ensure even cooking. Once cooked, strain shrimp from liquid and cool.

While the shrimp are cooling, small dice the peppers, onions, and tomatoes and place in metal bowl. Combine with rest of ingredients. Add the shrimp to the bowl and mix well.

On a plate spread out several leaves of Bibb lettuce. Place 3 to 4 shrimp in each Bibb cup and spoon some of the marinade in and around the lettuce wrap. Enjoy!
